Recipe of the Week

How to Prepare Winter Squash

The simplest way I know how is to slice it in half, and put face down on a baking sheet, adding a little water. Place in a 350 degree oven, and bake for about an hour, depending on size. You’ll know its done when you can easily pierce the skin and flesh with a fork.

 

Winter squash can be stored for many months, so don’t worry about getting to it this week. In fact, most of them get sweeter with age, especially the butternut.

 

You’re either receiving butternut, acorn or spaghetti squash this week. The butternut are tan in color, the acorn are small, round and green, and the spaghetti squash are the striped ones. This is an interesting variety to me, and I wasn’t aware it would be so stripey, even though its variety name is “Stripetti”… when its cooked, remove the seeds and fork it out of the skin. It will act like spaghetti, and its pretty cool! I top it with tomato sauce.

 

What’s Happening on the Farm

 

As this is the 16th week of the CSA (wow, already??) and we have nine weeks to go, I’ve been looking back on the weekly totals to see where we stand. It looks as though the average for the half shares is $15 a week, which is more than the $13 weekly average we started with. (Full shares is about $22) Therefore, as we’re coming into a point in the season where we have limited quantities of veggies (waiting for the second tomatoes to ripen, and waiting patiently for the fall garden to grow) we’re contemplating taking a week’s break. We hadn’t planned on doing this at the beginning of the year, but now realize that even we need a vacation! Most of the CSA programs do schedule 2 or even 3 weeks off during the season, and now I see the benefits. We’re tentatively contemplating doing this next week, so there would be no delivery Wednesday and Thursday, August 22-23. I will let you all know for sure very soon (by the weekend) so you’re not stranded anywhere with no box!

 

 

 

What to Look Forward To

Sungolds are back! We’ll have these for a bit longer and more tomatoes are on the way. All the plants look fabulous, and I’m quite proud of them for hanging in there during all this hot weather! As I mentioned earlier, the fall garden is up, and the arugula and radishes are merely weeks away! As soon as it rains, I can get more beds planted to fall greens, but I create Dust Bowl-like conditions when I try now. So please do another rain dance for us!

More peppers and eggplant, and I think some more summer squash for next week? They look great as well, the best late-summer squash crop I’ve had.
