Recipe of the Week

Radish Top Soup

INGREDIENTS

 

    * 2 tablespoons butter

    * 1 large onion, diced

    * 2 medium potatoes, sliced

    * 4 cups raw radish greens

    * 4 cups chicken broth

    * 1/3 cup heavy cream

    * 5 radishes, sliced

DIRECTIONS

                1. Melt butter in a large saucepan over medium heat. Stir in the onion, and saute until tender. Mix in the potatoes and radish greens, coating them with the butter. Pour in chicken broth. Bring the mixture to a boil. Reduce heat, and simmer 30 minutes.

   2. Allow the soup mixture to cool slightly, and transfer to a blender. Blend until smooth.

   3. Return the mixture to the saucepan. Mix in the heavy cream. Cook and stir until well blended. Serve with radish slices.

 

 

 

 

 

 

What’s Happening on the Farm

 

I’m desperately trying to find you more variety. Bear with me for just a few more weeks, hopefully by then we’ll have some more greens for you. Now that it has finally cooled off and we’ve gotten some rain, I can plant in earnest, and I’ve certainly made the attempt to catch up to where we should be by this time. Its still too warm, it seems, for spinach seed to germinate, but I’ll keep trying. Normally, the fall garden is one of my favorites to work with, but this year has just been completely odd for me. I know that with farming, I need to be flexible when it comes to Mother Nature, but wow… what a summer…

 

Many of you will be happy to know that I have decided to plant strawberries for next season. There are so many strawberries at our local farmers market, I never had a desire to grow them. But a few of you have requested no-spray strawberries, so I think we’ll give them a whirl. I ordered 600 plants and I have to go to pick them up in Virginia at the end of this month. Its going to be a totally new experience, as I’ve never paid attention to their culture. I’m planning on planting blueberries and blackberries as well, but since their fruits are a few years in the making, I figured having strawberries (plant in the fall, harvest the following spring) would maybe tide us over for now.

 

What to Look Forward To

Turnip greens and swiss chard in the “greens” category, and more tomatoes, peppers, and eggplant if the plants can hold on and just produce a bit more! As I mentioned before, lettuce mix, mustards, braising greens in probably 3-4 weeks.
